Homemade salsa recipe that will knock your socks off

Nowadays, I only use salsa on my beans. I used to eat it with tortilla chips, but unfortunately they are too oily and salty. You could buy corn tortillas (like I used to) and bake them yourself. I don’t recommend eating processed grains because these can cause weight gain.

I know chips taste good, and still love them, it’s just that I’ve decided not to eat them anymore. As with wheat, corn can be another culprit as far as gluten goes (yes, corn including all types of grains have their own particular glutens.)

I feel better without eating most grains except for quinoa and brown rice. I did self testing over and over again giving wheat bread, rye bread, barley, corn and most of the others many chances. I am searching for other alternative grains that don’t affect me adversely.

Maybe grain doesn’t affect you in a bad way, but if you happen to have inflammation and generalized aches and pains all over your body, you might want to experiment removing each grain you eat for a while to see if you don’t start feeling better. Also, stop using refined oils like olive oil, palm and vegetable oils.

Then, to be sure, you reintroduce each individually to see how they affect you. Did you know the gluten in corn can be more problematic to some of us than wheat?

I do like corn tortillas and corn on the cob, but feel I am better off without both. Grain is low in nutrition compared to fruits and vegetables.

Again, I do like my salsa on my beans, but prefer making it myself. I like it mild in heat. I used to use the popular brands straight off the store’s shelf, but they contain too much salt and sugar.

I have always loved salt, but am tired of my ears ringing because I have overdone my daily sodium. Now, I just sprinkle a little salt and pepper on some foods, but no more than that.

Homemade salsa ingredients…

  • 2 large cut up tomatoes
  • 1/4 cup chopped onion
  • 1/4 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 cup fresh cilantro
  • 1/4 teaspoon parsley
  • 1/2 whole lemon juice (or lime)
  • 1 clove garlic, minced
  • I use the milder chili peppers like the Anaheim, poblano, Hungarian wax or ancho chili. Use 1 whole or less jalapeno, chopped up if you like the very hot.
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

How I prepare my own salsa:

Combine all the above ingredients in your food processor. This is the best kitchen instrument you can buy in the universe besides a blender. Pulse your food processor until the salsa looks the way you want, chunkier or thinner.

If you don’t have one, use your blender. But, if you don’t have either, you don’t have to buy the most expensive to start out on. Shop around for a deal or you can simply dice everything up by hand. Taste test along the way and adjust by adding more salt or spices.
