Rice Vinegar Cabbage Salad with Pumpkin and Sunflower seeds

I like cabbage and eat it quite often. It’s supposed to be a great cancer fighter. I like tart dressings, so I use seasoned rice vinegar on my cabbage salad with a few pumpkin and sunflower seeds on top.

I usually have this type of salad or butter lettuce everyday. I have found ‘green is good’ and either one of these provides good nutrition alongside beans and rice. You don’t need to drink green juice. I know, I did it for years. It always made me feel ‘weird’. You don’t need it.

Eating an ample supply of raw and cooked fruits and vegetables will bring more healthful results than juice, alone. At least, I know from personal experience this is true for yours truly.

We don’t want to leave the fiber behind. Fiber is an essential nutrient. We need to chew with our teeth for maximum nutrition. That’s what our teeth were made for.

Here’s how I do my cabbage salad…

  • Thinly slice up one to two cups of green cabbage
  • Sprinkle your seeds on top (get roasted with no salt)
  • Pour your rice vinegar
  • Toss with your fork
