Avocado Cucumber Hummus Sandwich Roll-Up Recipe

Ezekiel sprouted whole grain tortillas

I made myself a new sandwich the other day and wanted to share it with you. As you know, I am a vegetarian. More accurately, I eat only plant based whole food.

There is a difference between eating plant based whole food and being vegan or vegetarian. Vegetarians and vegans may eat french fries and drink soft drinks. This qualifies as vegetarian, but is not plant based whole food.

‘I choose sprouted grains which are organic and non-GMO. I would say that whenever you buy organic, by default it should also be non-GMO’ ~ your author

Currently, I buy ‘Food for Life®’ grain products because I am still testing how grain in this form makes me feel. I buy their Ezekiel 4:9® low sodium sprouted whole grain bread, Ezekiel 4:9® original flake cereal which is sprouted and Ezekiel 4:9® whole grain sprouted tortillas.

‘Sprouting of grains for a limited period causes increased activities of hydrolytic enzymes, improvement in the contents of certain essential amino acids, total sugars, and B-group vitamins, and a decrease in dry matter, starch, and antinutrients. The digestibilities of storage proteins and starch are improved due to their partial hydrolysis during sprouting [1 ncbi.nlm.nih.gov/pubmed/2692609/]’.

How I do my Avocado Cucumber Hummus Sandwich Roll-Up Recipe

  • Thinly slice organic cucumber and onion
  • Chop up organic romaine lettuce
  • Mash up 1/2 an avocado
  • Heat up one tortilla 30 seconds
  • Slather on my red pepper hummus
  • I also drizzle brown spicy mustard (optional)
  • Spoon the avocado on and spread around evenly
  • Chop cucumber, and lay onion and romaine lettuce over
  • Optional ingredients you might want to add are beans, corn, sliced red bell pepper
  • Roll it up as tight as you can, but be careful not to break it open

“Take also unto thee wheat, and barley, and beans, and lentils and millet, and spelt and put them in one vessel…” Ezekiel 4:9

This tortilla, just like their cereal and breads are very hearty and filling. Believe me, if you start eating these on a regular basis, if you are constipated, you will soon become regular!

Although, I am still experimenting with eating only sprouted grains, I wouldn’t recommend any product I do not use myself. If you like steel cut oats, you will surely like this brand of hearty grain products that are very ‘chewy’.
