Pan Fried Tomato Rice With Mexican/Spanish Flair Recipe

I know I just wrote a post yesterday making what I thought was Mexican/Spanish rice the easy way. I wanted to make this rice recipe as genuine to common guidelines as humanly possible. I really like cooking, especially if my wife gives me a ‘thumbs up’ on a new dish I ‘dream up’.

‘I always loved Mexican food, but don’t eat meat, tortillas and cheese. So, what’s left? These days, it will be Mexican/Spanish rice and beans with a large green salad on the side…’

This new recipe I cooked slightly different, which takes a little more time, probably about a half an hour total. Yet, I found it well worth the effort, but you have to be careful to add enough water, keep a keen eye on the time and turn the heat way down to simmer so you don’t burn the rice in the center of your frying pan.

‘First time around (just this morning) I burned the rice in the center of the frying pan. But, I saved the day because I removed all the burnt rice with a fork…’

Here’s How I Do My Almost Genuine Pan Fried Mexican/Spanish Flair Tomato Rice Recipe…

  • Rinse one cup of rice in a colander twice or three times until clear
  • Pour two tablespoons of extra virgin olive oil in a hot frying pan
  • You can test the oil if it’s hot enough by putting a piece of rice in and watch it swim around
  • Brown your white rice by stirring it (don’t use a spatula, I melted mine and had to order a new one this morning on Amazon®!)
  • Add half a cup of diced onion and brown
  • You need ‘two cups’ of liquid
  • What I do is half water and half chicken broth (I use Swanson’s natural goodness® chicken broth)
  • I use Hunt’s tomato sauce with basil, garlic and oregano 8 oz.
  • You can add regular tomato sauce and shake garlic powder in, instead
  • Add your spices: cumin, chili powder, black pepper and paprika to taste (your choice is either a shake or two or 1/4 to 1 teaspoon)
  • If you have a glass lid you can see when it’s almost done
  • Don’t lift the lid!
  • It should be done in about 20 minutes, take off heat, keep the lid on and let it sit for about 5 minutes
  • Fluff up rice and eat with beans and salad!
